Our universal curing machines are characterised by performance parameters such as injection volumes of up to 40 % and an hourly output of 500 kg - 1500 kg. This compact machine has been continuously upgraded during the course of the last 30 years and it is therefore particularly reliable. Whether injecting thin or viscous brine, this range of models delivers high injection accuracy with a variance of just 1%.

Mobility

Thanks to its mobility, external dimensions and low weight, this machine can also be used in the smallest of rooms. Tailored to butchery requirements, the machines differ in terms of the number of needles used; the needles are predominantly responsible for throughput. This is the only distinguishing feature between the PR 8, PR 10 and PR 15 models. In addition, the PR 20 is based on a larger machine frame that is not only the right height for a 200-litre standard carriage but also has a larger feed aperture for larger boiled hams.

More Features

Universal mode

The universal mode of operation allows the processing of all meat parts with a single setting without the need for retooling. This applies to all types of ham from the shoulder and back of the pig.

No brine nester

The large pump volume allows low pressures and thereby prevents brine nester. This results in even curing, particularly for meat pieces of different consistencies.

Continuous operation

Continuous operation under tough conditions does not have a negative effect on the service life of the machine. Needle wear remains very low.

Difficult types of meat

The solid meat structures are cured thoroughly, even in the case of particularly difficult types of meat containing delicate bones that must not be broken.

Ham

Our curing machines have been used to make ham from virtually everything, for example, pork, beef, lamb and goat.
