The HighTech Tumbler is a real all-rounder offering chilled tumbling, mixing and marinating. It performs each of these tasks to optimum effect without concentrating on one application at the expense of another. On the contrary, the technical equipment for tumbling is also used for mixing, for example.

new quality standards

The system uses a rotating arm in the tank and is still the subject of much discussion today since it is often criticised as being too aggressive for the production of cooked ham.
This was certainly the case when the system was still in its infancy, however, since the early 1990s at the latest, the HighTech Tumbler has set completely new quality standards.

In recent years, this machine has led the field in butchery – and rightly so. A comprehensive technology package enables computer-controlled adjustment of the machine to the meat currently being processed; this adjustment is accurate to a minute.

For example, if very low temperatures are initially required when processing cooked ham in order to break down the proteins present, temperatures have to be increased towards the end of the process in order to improve the moulding properties of the ham.

Models

The MGR 400 machine type processes around 300 kg of boiled ham in a single batch, which means that it meets the requirements of smaller business. A butcher with higher processing requirements is best served by the MGR 900, which has nearly the same footprint but offers a batch volume of 675 kg.

The MGR 1500 is the machine available for greater volumes. All models have an automatic feed system.

Very low processing temperatures

The particularly gentle movement is aided by very low processing temperatures. The structure of the meat is clearly visible, even with higher yields. This is how a real butcher’s ham should look.

Salt distribution

It just takes a few revolutions to distribute the salt through the raw ham. The machine not only operates more accurately than the manual dry-salting method, but it also uses less salt.

High-quality salad

High-quality salad is particularly sensitive to movement and thus requires gentle processing. Various mixing-arm designs are available for this.

Marinating

Marinating in the HighTech Tumbler enhances the quality of fresh meat. The tumbling effect distributes the herbs and spices and works them and the relevant liquids into the meat.

Pasta

Pasta presents the greatest mixing challenge since, due to the stickiness of the pasta, it is difficult to achieve an even distribution of the sauce. However, this is not a problem for the HighTech Tumbler.

High vacuum and cold processing

Due to the high vacuum and cold processing, only little movement is necessary; this prevents damage to the skin of the chicken.

Döner kebab of sliced or minced meat

Whether used to make a döner kebab of sliced or minced meat, the machine has to operate at full power. It takes just 10 minutes to produce a perfect result, even under “tough conditions”.
