The compact curing centre with 112 needles
The curing centre IR112 gives the best curing results of up to 7000 Kg ham per hour with a belt width of 700 mm and a passage height of 230 mm. So far this machine was only offered fully equipped and that is why the cost and the sheer size of the machine was an obstacle for many to buy this machine.
We used this as an opportunity to present a new machine with the dimensions of 1 m width, 2 m length and 2 m height, and therefore little floor space requirement, at the IFFA in Frankfurt. The decrease in size does not result in a reduction of the features of the machine but actually brings a vast improvement of machine properties with it. Now just 30 litres of brine are sufficient to get this high performance machine ready to start. The premium-quality brine recycling is still part of the standard equipment.
Brand new however is a rotating filter drum which recycles the brine. The filter drum has to be cleaned only once a day in almost every case. The new curing centre now has a built-in brine mixer which keeps the brine mixture stable over the complete curing period and provides for consistent brine and a uniform product as a consequence. Further features are the single needle control, automatic system deaeration before the first injection and automatic self-cleaning of all brine-bearing systems.
From 3% to 100% injection amount the machine works with percent accuracy. The intelligent control technology guarantees uniformity through and through. That is why the curing centre produces ham with superior quality.
